Strawberry Muffins

If you read my previous posts you will know my love for muffins. With strawberry in the season I keep looking for varieties of recipes where I can use them in every possible way. This is a very simple and quick way of making strawberry muffins. I’m sure you’ll love them!



Ingredients:
Flour/maida – 1 ½ cups
Strawberry – 1 cup chopped
Sugar – ½ cup
Salt – ½ tsp
Baking powder – 2 tsp
Egg – 1
Milk - ¾ cup
Veg oil – ¼ cup
Vanilla essence – 1 tsp

Method:
Preheat oven to 200C.
Sieve together flour, baking powder and salt atleast twice. Then add sugar and strawberries. Reserve some strawberries to top on the muffins while baking.
 






In another bowl whisk together egg, oil, milk, vanilla essence. Now pour this mixture into the flour mixture and gently fold until they combine well.





Scoop into your muffin liners/tray. Bake for 12-15mins or until they bounce back when you touch them.




Apple and Cinnamon Cake



With the amount of sweet stuffs I bake, I was am worried about my hubby’s health, which is why I thought this time for his birthday I might bake a very simple and fat free cake for him.
I love the combination of apple and cinnamon. I have had loads of apple and cinnamon muffins but never a cake. So this time I thought of baking an apple and cinnamon cake for hubby’s bday, fat free style!!


Ingredients:
Flour/maida – 1 cup
Ground cinnamon – 2 tsp
Baking soda – 1 tsp
Salt – ¼ tsp
Sugar – 1 cup
Eggs – 2
Veg oil – 2 tbsp
Apples – 2 (peeled and chopped not more the size of a pea)
Youghurt – ¼ cup
Honey – 3 tbsp

Method:
Preheat oven to 200C. Grease your cake tin. 

Sieve together flour, cinnamon, baking soda and salt for a couple of times. Add sugar and apples and mix until they combine well.

In another bowl whisk together eggs, oil, yoghurt and honey.

Now gently fold the wet ingredients to the dry ingredients. They might seem a bit difficult to combine but don’t worry, the mixture gets wetter as you keep combining them.

Pour the batter into your greased pan and bake for 30mins or until a skewer inserted comes out clean.

Let it cool. Best served with a scoop of vanilla ice cream! Yum!!



Muttar Pulao



Last night I had my husband’s friend come over for dinner without notice and I had to cook up something very quick. This is a very simple recipe if you go through one of such days and running short of time to cook for your guests!






Ingredients:
Basmati rice – 1 cup
Water – 2 cups
Muttar (green peas) – ½ cup
Onion – ½
Ghee – 4 tbsp
Cardamom – 3
Cinnamon – 1 small piece
Cloves – 4
Salt – to taste

Method:
Wash and drain rice. Keep aside.
In a pan pour the ghee and add all the spices. Sauté them and add the onions. Once they turn pink, add the rice.

Fry the rice for a while until they turn white and pale. Now add the water and peas. You can add a dollop of ghee at this stage for richer flavor. Cover and cook till done.
